First
of all, I am really sorry for not having posted any recipes for quite some
time. After having moved back to Chennai, things are really very busy at my
end, with furnishing our house, going to temples, visiting relatives and lot
more. I hope and wish to settle down faster at our house, so that I can start
posting recipes regularly. Now that the kids are enjoying holidays, they always
want to munch on something, so here’s a very healthy, easy and a quick treat
for your kids. Try out these healthy muffins and have a great day.
Here’s
how to make Ragi & Banana Muffins with step by step photos…
Ragi Flour

1/3 cup

Wheat Flour
|
¾ cup
|
Baking powder
|
1 tsp
|
Baking soda
|
¼ tsp
|
Nutmeg powder
|
¼ tsp
|
Salt
|
1/8 tsp
|
Sugar
|
¼ cup
|
Egg
|
1
|
Banana
|
1 [mashed or blended]
|
Milk
|
¼ cup [60ml]
|
Vanilla essence
|
1 tsp
|
Oil
|
2 tbsp
|
Raisins/Nuts
|
10-12
|
Preparation
time: 10 minutes
Baking
time: 15 to 20 minutes

8 -10 muffins

Method
Preheat
the oven to 180 C/350 F. Line the muffin pan with cupcake liners.
In a
wide bowl, add ragi flour, wheat flour, baking powder, baking soda, nutmeg
powder, salt and mix really well.
In
another bowl add mashed banana, sugar, egg, oil, milk, vanilla essence and beat
really well until well combined.
Now add
the banana mixture to the flour mixture and mix gently until well combined with
a spatula. Do not over mix otherwise the muffins will turn hard.
The
consistency of the batter will be thick and not watery. If it is really thick
add one tbsp. of milk and mix.
Slowly
scoop out the mixture to the muffin pan, arrange two or three raisins or nuts
on the batter. Bake it for about 15 to 20 minutes or until the tooth pick comes
out clean.
Delicious
healthy and yummy Ragi & Banana muffins are ready to be enjoyed, serve it
as evening snacks for your kids or enjoy it for breakfast.
