Mango Ice cream /Mango Ice cream with No Eggs/Mango Ice cream with No Ice cream Maker/Maampazham Icecream

Today I am going to share a tempting and delicious mango ice cream. I am pretty sure nobody will say no to mangoes and also when it comes to mango ice creams it is always a super hit. Earlier I have posted Mango Ice cream with condensed milk, but this mango ice cream is made with fresh cream and little milk. This mango ice cream is very special because I made this with our home grown organic mangoes which are extremely sweet. Try out this easy mango ice cream and have a great day.

Here’s how to make Mango ice cream with step by step photos…

Ingredients
Mango
3 [medium size]
Fresh Cream
200 ml [full fat or medium fat]
Milk
½ cup
Sugar
2 tbsp [depends on the taste of the mango, adjust to taste]
Salt
One pinch
Vanilla essence
1 tsp
Preparation time: 20 minutes
Resting time: 8 hours        
Serves: 8-10

Method

Wash the mango and get the flesh part out.


Blend the mangoes with sugar, vanilla essence, salt and milk in a mixer to a smooth paste.


Now pour the fresh cream to a deep bowl. I used the full fat cream so that the ice cream will have creamy texture.

Beat it well with a hand blender for about 2-3 minutes or until it becomes creamy.


Now add the mango puree , fold and mix well. Check the sugar at this point and add more if needed.

Pour this mixture into a freezer safe container, cover it and keep it in the freezer. When the ice cream is half frozen, remove it from the freezer and whip it again for about a minute. This will prevent the crystallization of the ice cream.


Cover it and keep it in the freezer. Freeze till set.


Scoop this tempting mango ice cream to serving bowl, add freshly cut mango cubes along with a tsp of honey and enjoy.
