Method
Wash
the mango and get the flesh part out.
Blend
the mangoes with sugar, vanilla essence, salt and milk in a mixer to a smooth paste.
Now pour
the fresh cream to a deep bowl. I used the full fat cream so that the ice cream
will have creamy texture.
Beat it
well with a hand blender for about 2-3 minutes or until it becomes creamy.
Now add
the mango puree , fold and mix well. Check the sugar at this point and add more
if needed.
Pour
this mixture into a freezer safe container, cover it and keep it in the
freezer. When
the ice cream is half frozen, remove it from the freezer and whip it again for
about a minute. This will prevent the crystallization of the ice cream.
Cover
it and keep it in the freezer. Freeze till set.
Scoop
this tempting mango ice cream to serving bowl, add freshly cut mango cubes along
with a tsp of honey and enjoy.
