Kuthiravali Arisi Thayir Sadham/Bagalabath with Kuthiravali Arisi/Barnyard Millet Bagalabath/Curd Rice with Barnyard Millet

Today I am going to share one very simple, healthy and traditional recipe – Kuthiravali Thayir Sadham. Nobody will surely refuse this comfort food. I have already posted about the benefits of Kuthiravali arisi and other millets here. So, for now I am going to move on to the recipe. Here’s how to make Kuthiravali Thayir with step by step photos…



Ingredients

Kuthiravali/Barnyard Millet
1 cup
Water
2 cups
Yogurt/Curd/Thayir
1 cup
Milk
2 cups
Salt
As needed
Grated Carrot
1 tbsp for garnishing
Cilantro
1 tbsp finely chopped for garnishing

For Tempering

Mustard Seeds
1 tsp
Cumin Seeds
½ tsp
Dry Red Chillies
2
Bengal Gram Dal/Kadalai Paruppu
1 tsp
Urad Dal/Ullutham PAruppu
1 tsp
Green Chillies
3-4 finely chopped
Ginger
2 tsp finely chopped
Cashew nuts [optional]
8-10
Raisins [optional]
8-10
Asafoetida/Hing
1 big pinch
Curry Leaves
8-10
Oil
2 tsp

Method

Cooking of Kuthiravali Arisi


Wash the kuthiravali arisi/Barynyard millet with clean water 2-3 times and drain the water. Soak the kuthiravali arisi/Barnyard Millet in water for 5 minutes.


If you are going to pressure cook then for 1 cup of rice add 2 cups of water and cook for 3 whistles along with salt.

If you are going to cook in open pan then for 1 cup of rice add 4 cups of water and cook.
I cooked the kuthiravali arisi/barnyard millet in pressure cooker.

After the steam releases, mix it well with ladle. Add 1 cup of water and mix thoroughly.


Now add yogurt, milk and mix really well without any lumps. Check the salt at this point and adjust accordingly. Cover and keep it aside.


Heat oil in a kadai, crackle the mustard seeds, add cumin seeds,dry red chillies, Bengal gram dal, urad dal and cashew nuts. Wait until the dal starts to turn colour, now add the green chillies, ginger, raisins, asafetida, curry leaves and sauté for 15 -20 sec on low flame. Switch off the stove.


Add the tempering to the cooked kuthiravali arisi and mix really well.



Finally garnish it with grated carrots and chopped cilantro/kothamalli.


Suggestions:
Add more milk if needed to adjust the consistency.

I have soaked the rice for 5-7 minutes so the ratio for cooking is Kuthiravali :Water is 1:2 . 
If you don’t have time to soak the rice or if you forget to soak it then increase the amount of water to 3 cups.
