Cucumber & Tomato Salad/Weight loss Recipes/Diet Recipes/Easy and Quick Salad Recipes/Vellarikkai Thakkali Salad

We are always on the lookout of healthy and easy to make recipes. Here’s one such lovely, healthy and a wonderful salad that can be made in jiffy. This salad can be served to kids as evening snacks which is so refreshing and colorful. If you are diet conscious, then this salad is a must in your menu. Here’s how to make Cucumber & Tomato Salad with step by step photos…


Ingredients
Cucumber/Vellarikkai
1 chopped [to small cubes]
Tomatoes/Thakkali
2 chopped
Cilantro/Coriander Leaves
One handful finely chopped
Onion [optional]
½ finely chopped
Lemon Juice
½ tsp
Black Pepper Powder
¼ tsp [adjust as per your need]
Salt
As needed
Preparation Time: 5-7 minutes
Cooking Time: 0 minutes
Serves: 2-3

Method

Wash and peel the cucumber. Chop them to small cubes. Chop the tomatoes and onions. Most of the time, I skip the onions, so it is totally your choice.


In a big bowl add the chopped cucumber, tomatoes, onions, lemon juice, salt, black pepper powder, cilantro and mix really well.


Yes, healthy and filling Cucumber Salad is ready to be enjoyed. You can either serve it at room temperature or chill the salad refrigerator and serve it cold.
