Aviyal

Aviyal is one of my husband’s all time favorite dish. It is one healthy dish with lots of different types of vegetables. Today when I was looking in my refrigerator to make something for dinner, I found only few beans, 2 carrots and all other vegetables only very little. Then I thought, yes I can make aviyal. Aviyal is a traditional dish from Kerala. It is very easy to make and has extraordinary taste and flavor.



Ingredients

Vegetables All Types

Plantain
½ cut into cubes
Potato
1 cut into cubes
Yam
1 cup
Drumstick
10 pieces
Carrots
½ cup cut lengthwise
Beans
½ cup
Brinjal
2 cut into slices
Peas
½ cup
Flat beans
½ cup
Turmeric Powder
½ tsp
Salt
as needed
Yogurt [ sour]
1 cup

For Grinding
Coconut
½ coconut or 2 cups shredded
Green Chillies

Cumin Seeds
½ tsp

For Seasoning
Coconut Oil
1 tsp
Mustard seeds
½ tsp
Cumin seeds
½ tsp
Urad dhal
¼ tsp
Curry leaves

Method
In a pot add all the ingredients mentioned in table I, pour little water, cover and cook for about 15 min’s. Make sure the vegetables are little crispy and not too soft otherwise aviyal will become very mushy.

Next grind the coconut, green chillies and cumin together. Add it to the cooked vegetables. Let it boil for 10 min’s.


In other pan heat oil, add the ingredients mentioned for seasoning and pour it over the vegetables. Keep it in the stove for another 5 to 10 min’s so that the flavor of coconut oil coats all the vegetables. Finally add the sour yogurt to the aviyal and switch off the stove.

[Use only coconut oil which gives unique flavor to the aviyal]

Yummy kerala aviyal is ready to be served.


Serving suggestion: It is an excellent side dish for Adai, and goes very well with all rice varieties.
