Carrot, Lemon & Ginger Soup

Here’s another healthy and spicy soup. It is “Carrot, Lemon and Ginger soup”, it has all the nutrient’s packed in it. You can have simple and healthy soup and bread dinner, which is both satisfying and delicious.



Ingredients

Carrots
250 gm diced
Potato
One diced
Onion
1 small diced
Tomato
1 small diced
Green chillies
2 slit
Ginger
½ inch chopped
Garlic
3 cloves
Cumin seeds
¼ tsp
Mint leaves
6 washed
Oil
1 tsp
Pepper powder
As needed
Salt
As needed
Lemon
Juice from ½ lemon
Vegetable stock
1 cup (optional)

Method

In a deep pot heat the oil, add cumin seeds followed by onions and green chillies, sauté until golden brown. Now add the tomatoes, ginger, garlic, carrots and potatoes, sauté for about 2 to 3 min’s.


Now add 2 cups of water, salt and vegetable stock close it and cook for about 15 min’s.


Switch off the stove, blend all the vegetables and save the cooked water. After blending mix it with the cooked water.


Garnish with mint leaves. Once the soup has cooled add lemon juice and required amount of pepper.

Yes now yummy “Carrot, Lemon & Ginger Soup” is ready to be served.
