Medhu Pakoda/ Pakora

Medhu pakoda's are excellent evening snacks served with coffee or tea.  

Here's how to make it with step by step photos...

Ingredients

Kadalai Maavu                      2 cups
Rice flour                               1 cup
Chilli powder                         1 tsp
Greenchillies                         2 or 3 nos
Small onion                           1 finely chopped(optional)  
Curry leaves                          2 or 3 leaves
Blackpepper                          1/2 tsp
Cumin seeds                                     1/2 tsp
Cashewnuts                          6 nos (chopped)
Ghee                                      4 to 5 tsp
Bakingpowder                     1/4 tsp
(sodiumbicarb) 
Salt                                        as required
Oil                                          to fry
Water                                   to make dough

Method

Mix kadalai Maavu(bengalgram flour), rice flour, salt, chilli powder,cumin and coarsely pounded black pepper and keep it aside.



In a wide vessel mix ghee and sodium- bi- carb, agitate with fingers to make milky frothy paste.Now add the dry flour mix to the ghee paste, mix thoroughly so that soda and ghee mix uniformly.




Now add green chillies,onions, curry leaves. Mix them well.





Make four equal portions, Now add little water to make dough(make sure not to add more water). Make small balls, insert small peice of cashew nut in each pakoda urundai.
Fry the pakodas till golden brown. Now yummy crispy MedhuPakoda's are ready to be served.
