In a
pressure cooker, add oil and ghee. Now add cinnamon sticks, cloves, bay leaves
and fennel seeds. Sauté it for a min. [ Wash and soak the basmathi rice for 20
min’s].
Now add
onions, green chillies and garlic and sauté until the onion changes to golden
brown. Now add the tomatoes and sauté until mushy. Add half of the mint leaves
along with it.
Now add
the coconut milk, cilantro and salt. Let it boil, when you see the bubbles add
the washed basmathi rice. Mix the rice gently, lower the flame to medium, just
close the lid and cook for 10 to 12 min’s. [No whistle, just cover and cook]
Finally
add the mint leaves and serve it with raitha.
Ta da!!! Delicious and super flavourful Tomato Pulav is ready to be enjoyed.
