Red Bell Pepper/ Capsicum Soup

Hello everybody, here is a easy and a healthy red bell pepper soup. This soup is so fascinating and attractive because of its color and once you taste it you will never forget the taste.



Ingredients

Red Bell Peppers(Capsicum)
2 diced (stem, seeds removed and discarded)
Potato
1 big diced
Onion
1 small chopped
Garlic Cloves
3 diced
Olive Oil
2 tbsp
Green Chilli
1
Red Chilli
1 or 2 depending upon taste
Vegetable or Chicken stock
1 cup (optional)
Cilantro
2 tsp finely chopped
Cumin powder
¼ tsp
Black pepper powder
¼ tsp
Sour cream or double cream,salt
For garnishing

 Method

In heavy bottomed pot heat oil, add onions, red chillies, green chillies, garlic and sauté until golden brown. Now add the bell peppers, potatoes and sauté for 5 min.


Now add water cover and cook for 20 min or you can pressure cook it for 2 whistles, this will cut short your time to 10 min.



Later save the cooked water and blend the rest in the mixer. Now add the ground paste to the saved water. If you want you can add vegetable or chicken stock at this point which gives good flavor and taste or you can just add more water for required consistency.


Boil in the stove for 2 min, add the cumin powder and your RED BELL PEPPER SOUP is ready to be served.

Add required amount of salt and black pepper. Garnish with cilantro and serve it with sour cream and toasted bread.



You can drizzle some lemon juice for more taste.

It takes only 20 min to cook your soup, so why not try it….

Note: You can try it with yellow or orange bell peppers also.
