Yummy and Simple Egg kurma....
Ingredients
Onion

1 big chopped

Tomato

3 chopped

Green Chillies

Ginger & Garlic paste

Coconut
|
½ cup shredded
|
Eggs
|

Tempering
Oil

Cinnamon Sticks

Cloves or kiraambu

Method
In a kadai
heat 1 tsp oil add cumin seeds, Onions, tomatoes, green chillies and sauté until
soft and cooked. Later add the ginger & garlic paste and sauté. Let it cool
down and grind it in to smooth paste.
Grind
the coconut in to a smooth paste and keep it aside.
In the
same kadai add 1 tsp oil, add ingredients mentioned for tempering, now add
ground onion & tomato paste. When it starts to boil add chilli powder,
coriander powder, turmeric powder and salt. Add required amount of water.Let it
cook for 10 min’s.
Add the
coconut paste and boil it for 5 min’s.
Now put
the stove in low flame. Break the eggs directly in the gravy in 5 different
spots, close the gravy for 10 min’s for eggs to cook.
Garnish
with cilantro and egg kurma is ready to be served.
You can serve egg kurma with pulav, ghee rice or chapatti.
