Potato Fry/Varuval

I will be more than happy, if I have just yogurt rice and potato fry. It is a very comforting food and any one new to cooking also can make it. There are different versions of potato fry, but this is my family's all time favorite. My kids just love them. You can just layer it between bread slices, place it in the sandwich maker and have it hot. It will be heavenly...

Here’s how to make it with step by step photos…




Ingredients

Potatoes
4 boiled and cubed
Onion
2 medium finely chopped
Green chillies
2 finely chopped
Ginger & Garlic Paste
2 tsp
Oil
1 tbsp
Mustard seeds
¼ tsp
Cumin seeds
¼ tsp
Channa dhal
¼ tsp
Urad dhal
¼ tsp
Curry leaves
6
Red chilli powder
2 tsp
Coriander powder
1 tsp
Turmeric powder
¼ tsp
Salt
As needed
Lemon
Just for drizzling (optional)
Cilantro
 2 tsp finely chopped

Method

Heat the kadai add oil followed by mustard seeds after it splutters, add cumin seeds, channa dhal, urad dhal and curry leaves, sauté for 20 secs. Add onions and green chillies and saute until golden brown. Add the ginger & garlic paste saute for 30 secs.


Now add the boiled, peeled and cubed potatoes, add the red chilli powder, coriander powder, turmeric powder and salt. Mix all of them really well. Just sprinkle some water (not a lot) and mix. Don’t break the potatoes.

Fry them until done, add some oil if needed when frying.

Finally after switching off the stove garnish with cilantro and some lemon juice.
Yummy, yummy potato varuval is ready to be served.
