Potato,
Peas & Capsicum curry is a one pot curry which is very easy to make and a
very healthy dish.

how to make it with step by step photos…
Potatoes

3 boiled, peeled and cut to cubes

Peas
|
1 cup
|
Capsicum
|
1 cup cut to cubes
|
Onion
|
1 finely chopped
|
Tomatoes
|
2 finely chopped
|
Ginger
|
½ piece crushed
|
Garlic
|
3 cloves crushed
|
Cumin seeds
|
½ tsp
|
Red chilli powder
|
1 tsp (according to your taste)
|
Coriander powder
|
2 tsp
|
Turmeric powder
|
¼ tsp
|
Garam masala powder
|
½ tsp
|
Asafoetida
|
1 pinch
|
Methi leaves (dried)
|
1 tsp
|
Yogurt
|
2 tbsp
|
Salt
|
As needed
|
Oil
|
2 tsp
|
Lemon juice
|
2 tsp
|
Coriander leaves
|
2 tsp finely chopped
|
Method
Heat
oil in a pan add cumins and asafoetida, now add the onions and sauté until
golden brown. Add crushed ginger and garlic and sauté until raw smell goes off.
Now add the tomatoes and sauté for 20 secs.
Add the
peas and sauté for about a min, then add the red chilli powder, coriander powder,
turmeric powder, garam masala powder, salt and mix them well. Then add the
capsicums followed by the boiled potatoes and mix it well.
Add ½ cup
of water and cook for about 5 to 10 mins or until the raw smell of the masala
goes off. Now add the crushed methi leaves and yogurt, this gives the buttery
taste.(But adding methi and yogurt is totally optional).
Finally
garnish with coriander leaves and add lemon juice according to your taste.
Yummy “Potato,
Peas & Capsicum curry” is ready to be enjoyed.
This
can be had as side dish for rotis, dosas, pulav and even just mix it in white
rice and enjoy it.
Suggestions:
- You can as well add paneer to this curry, so the kids will love it.
- You can replace the tomatoes with the pureed tomatoes also.
