Qucik & Simple Vegetable Pulav in 3 steps/Vegetable Pulav Recipe/How to make Vegetable Pulav with step by step photos

“Simple, easy and quick Vegetable Pulav” is another one pot meal, hassle free and can be made within  30 mins. It is one balanced meal with all nutrients and minerals packed in one pot. Make this pulav in 3 simple steps.

Here’s how to make simple vegetable pulav in 3 simple steps with photos...


Ingredients

Basmathi rice
2 cups washed and soaked for 20 mins
Mixed vegetables(carrots,beans,peas)
Fresh or frozen
1 cup
Onions
1 sliced lengthwise
Green chillies
8 -10  slit (adjust as needed)
Ginger & Garlic paste
1 tbsp
Cinnamon sticks

Cloves
2
Bay leaves
2
Fennel seeds
¼ tsp
Coconut milk + water (mixed equally)
3 cups
Oil & ghee
1 tsp each
Mint leaves
15
Coriander leaves
2 tsp finely chopped
Salt
As needed

Method
 Wash & soak the rice for about 20-30 minutes. Wash and cut the vegetables, extract the coconut milk or used canned coconut milk.



In a pressure cooker heat oil & ghee, add cinnamon sticks, cloves, bay leaves, fennel seeds and sauté for 20 secs.Add onions, green chillies and sauté until golden brown. Now add the ginger & garlic paste and sauté until the raw smell goes off. Add the vegetables and sauté for about 3 mins.


Add the coconut milk, salt, mint leaves and let it come to boil. Now add the soaked basmathi rice, when it starts to bubble close the lid and cook for one whistle and switch off the stove.


Finally garnish with cilantro and few more mint leaves and mix them gently to the rice.
Yummy super simple vegetable pulav is ready, it can be served with raitha or kurma.


Suggestions:
Alternatively you can just close the lid and cook for about 10 to 12 mins without the whistle.
You can use one can of coconut milk instead of grinding the coconut, if you don’t have time for the same.
If you want the rice to be spicy you can more green chillies and adjust it according to your needs.
