Here’s
how to make it with step by step photos…
Ingredients
Rajma/Red Kidney beans

1 cup

Onion
|
1 big finely chopped
|
Tomatoes
|
3 finely chopped
|
Green chillies
|
2 finely chopped
|
Ginger & Garlic paste
|
2 tsp
|
Red chilli powder
|
1 tsp
|
Coriander powder
|
2 tsp
|
Garam masala powder
|
1 tsp
|
Turmeric powder
|
¼ tsp
|
Cumin seeds
|
1 tsp
|
Kasthuri methi leaves(dry crushed)
|
1 tsp
|
Oil
|
1 tbsp
|
Cilantro
|
2 tbsp finely chopped
|
Lemon juice ( from fresh lemon)
|
1 tsp
|
Butter (optional)
|
1 tsp
|
Method
Soak
rajma overnight and drain the water. Wash it, add salt and enough water to immerse rajma
completely and cook for 3- 4 whistles. Do not throw away the water used for
cooking rajma.
In a
deep saucepan heat oil, add the cumin seeds after about 2o sec, add onions and
green chillies and sauté until translucent. Now add the ginger & garlic
paste and sauté until the raw smell goes off.
Add the tomatoes and sauté until mushy. At this point, I use the masher to mash everything fine.
Now add
red chilli powder, coriander powder, turmeric powder, garam masala powder and sauté
for about 30 sec. Now add some water from the cooked rajma to the sauce pan and
let it boil good.
Add the
rajma and mix thoroughly. Use the masher to mash some of the rajma, add
kasthuri methi leaves, little salt and let cook for 5-10 min and switch off the stove.
Finally
add lemon juice, cilantro leaves and mix well, and serve it with butter.

ReplyDeleteOh, this looks so good Priya. I once made a Rajma masala with the recipe that was given in a cookbook that came with my pressure cooker. It was not quite what I was looking for. I will try out your version sometime :)
