Baby Potato Roast/Fry - Method I

This baby potato fry/roast is my family’s favorite. It is very easy and can be made very quickly as well.  I came across this recipe long time back in a television show and since then have been making this. Whenever I make these it just vanishes the very next minute I put it on the dining table. Any way guys give it a shot, you will surely like it.

Here’s how to make it with step by step photos…


Ingredients

Baby potatoes
15
Oil
2 – 3 tbsp
Mustard seeds
½ tsp
Cumin seeds
½ tsp
Urad dhal
½ tsp
Curry leaves
6
Kasthuri methi leaves
½ tsp crushed well

For marinating

Ginger & garlic paste
1 tbsp
Fresh Yogurt
½ cup
Red chilli powder
1 tsp
Coriander powder
2 tsp
Turmeric powder
¼ tsp
Cumin powder
½ tsp
Black pepper powder
1 tsp
Garam masala powder
¼ tsp
Lemon juice
1 tbsp
Salt
As needed

Method

Cook the baby potatoes peel the skin and keep it aside in a big bowl.

Add all the ingredients mentioned for marinating to the potatoes, mix it really well and keep it aside for at least 20 to 30 min.


In a kadai heat oil, add mustard seeds, after it splutters add cumin seeds, urad dhal, curry leaves and sauté until the dhal turns to golden brown color.


Now add the marinated potatoes along with the entire yogurt and cook them for about 3-4 min in high flame. When the oil starts to separate out reduce the flame to low and roast the potatoes until done. Be careful not to break the potatoes when tossing them.


Finally garnish with kasthuri methi leaves and cilantro give a good stir and switch off the stove.

Yummy crispy and delicious baby potato roast is ready to be enjoyed. It is a perfect side dish for simple and plain sambar or even just a rasam sadam.
