Vendakkai Garlic Pepper Fry Recipe/Vendakkai Milagu Varuval/Okra Garlic Pepper Fry Recipe/ Ladies Finger Garlic Pepper Fry with step by step photos and Video

This vendakkai fry is entirely different from the one in my previous Vendakkai Curry. This is garlic and pepper okra fry which is chef Dhamus recipe which I have been doing for years. It has all the benefits of garlic and pepper bundled together with okra. For me this okra fry is a  perfect replacement for the Pepper Chicken on vegetarian days. Here’s how to make it with step by step photos…



Ingredients
Vendakkai/Okra
750 gm
Garlic
One big pod
Onion
1 finely chopped
Green chillies
5-6 finely chopped
Black pepper powder
1 ½ tsp
Salt
As needed
Turmeric powder
1/2 tsp
Oil
1 tbsp
Curry leaves
10-12
Mustard seeds
½ tsp
Cumin seeds
½ tsp
Urad dhal
1 tsp

Method
Wash and pat dry the vendakkai well, there should be no water. Cut them to thin slices.
Peel the garlic and chop them finely and keep it aside. Use one big pod full of garlic or atleast 15 – 20 garlic cloves.

In a kadai heat oil, add mustard seeds after it splutters, add cumin seeds, urad dhal, curry leaves and sauté until the dhal color changes to golden brown.

Add the onions, green chillies, garlic, little salt and sauté until it changes to golden brown color.

Now add the okra, salt, turmeric powder and give a good toss for about a minute.

Sprinkle very little water, cover and cook the vendakkai for about 5 minutes.

Open the lid and fry the okra until the oil separates out. 

Now add the black pepper powder and toss it well. Adjust the pepper powder according to your taste and switch off the stove.

Delicious garlic & pepper okra fry is ready. It is a perfect match for any type of rice and also you can roll it roti and pack it for lunch.
