Quick & Simple Egg Bhurji /Spicy Scrambled Eggs

Egg Bhurji/Spicy Scrambled Eggs is very simple and easy dish which can be made within minutes. It can be made with variations like adding green bell pepper, red bell pepper etc, but here I have made it very basic just with onions and green chillies.

Here's how to make it with step by step photos...


Ingredients

Eggs
6
Onion
2 big finely chopped
Green chillies
4 finely chopped
Ginger
1 inch piece finely chopped
Garlic
4 cloves finely chopped
Red chilli powder
1 tsp (adjust according to taste)
Coriander powder
1 tsp
Garam masala powder
¼ tsp (optional – I have not used it)
Turmeric powder
¼ tsp
Curry leaves
4-5
Cilantro
1 tbsp finely chopped
Oil
1 tbsp
Salt
As needed

Method

Heat oil in a kadai, add onions, green chillies, ginger, garlic and curry leaves and sauté until translucent.


Now add the eggs, I break the eggs directly to the kadai. If you are really not sure about that, you can break the eggs in a separate bowl and beat it and then add it to the kadai.


Add the chilli powder, coriander powder, turmeric powder, salt and mix everything well. Now sauté for about 5 min or until the egg is cooked. Finally add the chopped cilantro and mix well.

Hot and yummy egg bhurji is ready to be enjoyed. It can be served with rice or rotis. You can very well use as filling for wraps.
