Transfer it to a plate or muram and rub the peanuts
well to get rid of the skin.
Winnow it thoroughly. Clean, roasted peanuts is ready.
Add ½ cup of roasted peanuts, ½ cup of fried gram to
the mixer.
Grind everything to a coarse powder.
Add 1 cup of ragi flour/kezhvaragu maavu to a bowl, and the ground peanut & fried gram mixture.
Add 1 tbsp of rice flour and required salt. Mix
everything really well.
Now add 1 finely chopped onion, green chillies,
ginger, curry leaves, cilantro and mix well.
Add water little by little and mix everything to make
a dough.
The dough should be crumbly so that you will be able to make vadai.
Make lemon sized ball out the mixture, pat them on
your palm to make vadais as shown.
Heat oil in a kadai to fry the vadais. When the oil is
hot enough, drop the vadais one by one and cook on medium flame.
Fry them to golden brown color equally on all sides.
When done drain it out oil.
Similarly fry rest of vadais in batches.
Super delicious, crispy and crunchy Ragi Vadai is ready to be enjoyed. Serve it hot as evening snacks or appetizers or even as side dish for a rasam rice.
