Rava Kesari / Sooji Kesari/Rava Kesari Recipe- How to make Rava Kesari

Rava kesari is a very traditional dish made for all festive occasions in Southern Part of India especially Tamil Nadu. It is very quick dessert that can be made in no time. Kids love this rava kesari for its flavor and color. Rava kesari is also made in marriages with variations by adding fruits like pineapple, apple etc. It is very easy so just go ahead and try it and you will surely love it. Ingredients
Rava/Sooji
1 cup
Sugar
1 cup
Water
2 ½ cups
Melted ghee
4 – 5 tbsp
Cashew nuts
10
Raisins
10
¼ tsp
Orange food color
1 pinch

Method
In thick bottomed pan or a non stick pan heat about 2 tbsp of ghee and roast cashews and raisins until golden brown. Transfer it to a plate and keep it aside.

In the same pan, roast the rava in low flame until nice aroma comes. Be careful do not burn it. When it starts to change color, transfer it to another plate.

Now in the same pan boil about 2 ½ cups of water, when the bubble starts to appear, keep the flame on low. Start adding the rava little by little stirring continuously. Make sure there are no lumps and rava cooks well by “Stirring”.

Once the rava is cooked, add the food color and sugar and keep stirring continuously. The sugar will melt and start forming lumps, but do not worry. You just keep stirring and add the rest of the ghee also. Finally add 1/4 tsp cardaomom powder/Elachi Powder and mix really well.

Keep stirring until the rava forms a mass and leaves the sides of the pan. Add the roasted cashews and raisins. Give a good stir and switch off the stove.

Yummy and delicious RAVA KESARI is ready to be enjoyed.
