Payasam/Vermicelli
Payasam/Vermicelli Kheer is a very common and famous dessert in South India. No
Tamil feast is complete without a payasam, it is so simple and can be made within
minutes. It is one traditional sweet that is made on all auspicious and festive
occasions.
Now add one cup of milk and cook the vermicelli. It cooks in about 5-7 min.
Now add rest of the milk, sugar, cardamom powder, roasted cashew nuts and raisins. Wait for the milk to boil really well for about 5 min. Now switch off the stove.
Yummy semiya payasam is ready to be enjoyed. Garnish it with almond slices and serve it either hot or chilled.

Method
In a
pan heat ghee, add cashew nuts, raisins and roast them and keep it aside.
In the
same pan roast the vermicelli or you can use the roasted vermicelli available
in shops. Roast until they turn to golden brown.
Now add one cup of milk and cook the vermicelli. It cooks in about 5-7 min.
Now add rest of the milk, sugar, cardamom powder, roasted cashew nuts and raisins. Wait for the milk to boil really well for about 5 min. Now switch off the stove.
Yummy semiya payasam is ready to be enjoyed. Garnish it with almond slices and serve it either hot or chilled.
Suggestions:
If the
consistency of the payasam becomes thick, you can later on add more milk to
adjust it.
You can
also cook the vermicelli with water, but here I have cooked with milk.
You can
also replace sugar with condensed milk, which will be very yummy and creamy.
