This is
a very simple, quick and healthy dosa which involves no grinding and no
fermentation. This is similar to Rajasthani Puda but has the additional benefit
of zucchini added to it. Zucchini is a summer squash, is a very delicate
vegetable which needs very little time to cook. I came across this dosa in
Manjulas kitchen, but made some changes by adding different ingredients. Meanwhile do check out other interesting and healthy Breakfast

how to make zucchini besan flour dosa with step by step photos…
Beasan Flour/Kadalai maavu

1 cup
|
Rice flour
|
¼ cup
|
Zucchini (peeled & grated)
|
1 cup
|
Sambar powder
|
1 tsp
|
Cumin seeds
|
½ tsp
|
Ajwain seeds (ommam)
|
¼ tsp
|
Turmeric powder
|
¼ tsp
|
¼ tsp
|
|
Salt
|
As needed
|
Cilantro
|
2 tbsp finely chopped
|
Oil
|
For making dosa
|
Preparation Time: 112-15 minutes

Method
Wash
and peel the zucchini (courgette) and grate them with a grater and keep it
aside.
In a
deep bowl add all the ingredients mentioned in the above table, except oil without adding water. This is to
get rid of any lumps present.
Now add
enough water to the dry mixture and mix it really well to make dosa batter consistency.
Heat
tawa in the stove, pour one big ladle full of batter and make dosa. Add a tsp
of oil along the edges of the dosa. Cook them evenly on both sides to golden brown
color.
Delicious
and healthy besan flour dosa is ready, serve it hot with any hot and spicy
chutney.
