Spinach & Carrot Rice

Hi everybody, here’s another simple, easy and healthy one pot meal. It is just a fabulous lunch box recipe that can be made easily in the morning rush. Here’s the quick tip, just grate the carrots the previous night, keep it in the refrigerator and go to bed. Any way guys enjoy this healthy one pot meal.

Here’s how to make it with step by step photo’s…


Ingredients

Basmati Rice
2 cups
Spinach
2  to 2 ½ cups finely chopped
Grated Carrot
1 cup
Onion
2 thinly sliced
Green chillies
2 slit length wise
Cumin seeds
1 tsp
Cardamom
2
Bay leaves
2
Ginger & Garlic paste
2 tsp
Red chilli powder
1 tsp
Coriander powder
2 tsp
Turmeric powder
¼ tsp
Salt
As needed
Oil
2 tbsp

Method

Wash and cut the spinach finely, grate the carrots and keep it aside. Cut the onions length wise and slit the green chillies.

Wash the basmati rice and soak for about 20 min, drain the water and keep it aside.
In a heavy bottomed pot or pressure cooker heat the oil, add cumin seeds and let is splutter, now add the cardamom and bay leaves sauté for 20 sec. Add the onions, green chillies and sauté until golden brown.


Add the ginger & garlic paste and sauté until the raw smell goes off. Add the grated carrots and sauté about 3 min, now add the spinach and sauté until it shrinks.



Add the red chilli powder, coriander powder, turmeric powder, salt and sauté for about 3 min. Now add the basmati rice, give a gentle stir and do not break the rice.


Add about 3 cups of water and let it come to boil, adjust the salt at this point itself.
Close the pressure cooker lid and cook for two whistles. If you are using a pot, close it with tight lid and cook for about 12 – 14 min in medium flame.


Make sure the pot you are using is heavy bottomed or at least non stick, so that the rice won’t stick to the bottom.

Yummy, healthy and delicious spinach & carrot rice is ready to be enjoyed, serve it with raitha or even with plain yogurt.
