Zucchini /Courgette Chutney [South Indian Style -Side dish for Idlis & Dosas]

Zucchini is a summer squash, very low in calories (15 calories per 100gm), rich in folate, potassium and vitamin A. It is a very delicate vegetable which cooks very fast. This is a exotic chutney with a Indian twist…  Check out other delectable chutneys here.

Here’s how to make it with step by step photos…



Zucchini/Courgette

Onion
1 cut to cubes
Tomato
2 cut to cubes
Green chillies
3
Garlic
3 cloves
Urad dhal
2 tbsp
Dry Red chillies
2
Coriander seeds/Dhania
1 tsp
Turmeric powder
One pinch
Salt
As needed
Oil
2 tsp

To Temper

Mustard seeds
½ tsp
Cumin seeds
½ tsp
Curry leaves
6-8
Oil
1 tsp

Method

Wash the zucchini, peel and cut in to cubes (you can use it with the skin also).


Heat oil in a kadai, add urad dhal and sauté until golden brown. Now add the red chillies, coriander seeds and sauté for a minute. Add onions, green chillies, garlic and sauté until translucent.

Add the tomatoes, turmeric powder and sauté until mushy. Now add the zucchini, salt and sauté for about 3- 4 min, switch off the stove and let it cool.


Grind it in the blender to a fine chutney consistency and transfer it to a bowl.


In the same kadai heat oil, add ingredients mentioned for tempering and add it to the zucchini chutney.

Delicious zucchini chutney is ready to be enjoyed. Serve it with idlis, dosa or chapatis.

  4. I have been eating zucchini as raw salad all this time. A few slices for my rice when I don't have time to cook a side dish. But here comes a creative idea and I am enjoying it all the way.
