Apple Kheer/Payasam

I was actually craving for sweet this evening, now that I had lot of apples. I thought I will make apple payasam so that my kids also can enjoy it as an evening snack.

Here’s how to make apple payasam with step by step photos…


Ingredients

Apple
4
Milk (whole milk or 2%)
5 cups
Sugar
3 tbsp
Cardamom/Elachi
¼ tsp powdered
Cashew nuts
10 chopped
Almonds
6 chopped
Raisins
15 -20
Ghee
2 tsp
Method

In a heavy bottomed vessel boil the milk really well for about 15 to 20 min, the milk will reduce to half.

Wash, peel and core the apples. Now grate them in a grater and keep it aside.


In a pan add one tsp of ghee and sauté the apple until it changes color. Now add the sugar and sauté well until all the sugar is mixed well in the apple and then switch off the stove.


Now add the apple mixture to the boiling milk and simmer it for about 5. Add one pinch of salt to kick off the sweetness in the kheer. Adjust the sugar according to your taste. I added less sugar because the apple was sweeter.


Mean while in a kadai heat 1 tsp of ghee, add cashew nuts, almonds and raisins. Wait for the raisins to puff up then switch off the stove. Now add this to the kheer in the stove.


Now switch off the stove and delicious Apple kheer is ready to be enjoyed.

  11. Looks wonderful!! but priya! I have a doubt, will the kheer's color get changed after sometime? as apples are tends too!!

    1. No Suja. as the apples are sauted they dont change. But if ur planning to make it for a party and leave it for 5 to 6 hrs out, then u can add a pinch of baking soda when u saute the apples. I hope this helps...
