Badam Kheer/Badam Milk/Almond Milk with Saffron

Badam Milk is my all time favorite, I used to drink this in the evenings after coming back from school. But my mom used to make it with readymade mix available from the shops. It is a very healthy drink made in Northern part of India especially during special occasions and festivals. The recipe actually calls for sugar but sometimes I replace sugar with “panangkalkandu” as a healthy alternative. Other Tea/Beverage varieties that might be of interest…

Ingredients
Milk
3 cups
Badam/Almonds
20 – 25
Cashew nuts
10
Saffron/Kunkuma poo
5 strands
Sugar
2 ½ to 3 tbsp [adjust to taste]
Cardamom/Elachi powder
¼ tsp
Almond slices
Few for garnishing
Method

Blanching the almonds
Soak the almonds in hot water for about 10-20 min. Then remove the skin of the almonds. This is called as blanching.


Now grind the blanched almonds and cashewnuts in to a smooth paste by adding some milk.

Soak the saffron in 1 tbsp of warm milk for about 10 min.


Boil the milk in heavy bottomed vessel in medium heat, keep stirring occasionally to prevent burning of milk.

When the milk is boiled really well add the almond paste, saffron, sugar and cardamom. Reduce the flame to low heat and let it boil for another 4 – 5 min. Now switch off the stove.


Yummy, healthy and delicious Kesar Badam Milk is ready. Serve it either hot or cold with some almond slices.
