 Method
Wash and boil the potatoes, now peel them and mash them well.

Heat oil in a kadai and splutter mustard seeds. Now add cumin seeds, urad dal, Bengal gram dal, curry leaves and saute until the dal turn golden brown.

Add the onions, green chillies and saute until it turn golden brown. Now add the ginger & garlic paste and saute until the raw smell goes off.

Now add red chilli powder, coriander powder, cumin powder, garam masala powder, turmeric powder, salt and saute for about 3 – 4 min or until the raw smell vanishes.

Add the mashed potatoes and mix really well and cook for another 4 – 5 min or until all the masala is infused well.

Switch off the stove and let the potato masala cool down.

Drizzle about 1 tsp of oil to the potato masala and make small balls.

Now prepare the batter with the ingredients mentioned above (for batter) by slowly adding water. Make a little thicker batter for the bondas. Food color is optional, you can replace the food color with turmeric powder.

In a kadai, heat the oil for frying the bondas. Drop the potato masala balls in the batter, make a coating of batter on the balls and slowly drop it in to the hot oil.

Fry the bondas to golden brown color equally on all the sides.
