Chicken Varattiyathu Recipe – Kerala Style/Chicken Fry/How to make Chicken Varattiyathu with step by step photos

This chicken fry is a Kerala special called as chicken varattiyathu. I have come across so many chicken varattiyathu recipes, but I specially fell in love with one of my friend’s recipe, Rani of rani’s gourmet. I made some changes to the original recipe a little here and there. Here’s how to make Kerala Chicken fry with step by step photos…
Ingredients
Chicken
1 kg
Onion
2 finely chopped
Ginger & garlic paste
1 ½ tbsp.
Green chillies
3- 4 slit length wise
Tomato
1 finely chopped
Red chilli powder
1 tbsp
Coriander powder
2 tbsp
Garam masala
1 tsp
Turmeric powder
½ tsp
Curry leaves
8 -10
Coconut oil/Sunflower oil
2 tbsp
Cinnamon sticks
2
Cloves
2
Fennel seeds
¼ tsp
Salt
As needed
Coriander leaves
2 tbsp finely chopped

To Marinate
Ginger & garlic paste
1 ½ tbsp.
Red chilli powder
1 tbsp
Coriander powder
1 tbsp
½ tsp
Turmeric powder
½ tsp
Salt
As needed

Method
Clean, cut and wash the chicken, I have used boneless chicken cut to medium size pieces. You can use chicken with bone.

Add all the ingredients mentioned for marinating to the chicken and let it marinate for 30 min.



Now cook the marinated chicken with about ¾ cup of water either in pressure cooker for 2 whistles or directly in a pan. Keep it aside.

Heat oil in a kadai, add cinnamon sticks, cloves, bay leaf, fennel seeds and sauté until you get a nice aroma.


Add the onions, green chillies, curry leaves and sauté until golden brown. Now add the ginger & garlic paste and sauté until the raw smell goes off.


Now add the red chilli powder, coriander powder, garam masala powder, turmeric powder and sauté until raw smell vanishes.


Add the tomatoes and sauté until mushy. Now add the cooked chicken along with masala and cook in high flame until all the masala dries up.

 Reduce the flame and keep roasting the chicken until it turn brown, add oil if needed to fry the chicken.


Finally add the chopped coriander leaves and mix really well. Delicious chicken fry is ready to be enjoyed.
