Grated Moroccan Carrot Salad

This Grated Carrot Salad is a Moroccan salad, a simple, healthy, sweet and a spicy salad. Carrot is a versatile vegetable loaded with vitamins and minerals. It is an excellent source of Vitamin A, a good source of potassium and contains Vitamin C & B6 along with other minerals. The carrot has a distinctive orange color because it has high level of beta-carotene which is a strong antioxidant. So here is the grated carrot salad for a healthy living…

Here’s how to make Grated Carrot Salad with photos…



Ingredients

Carrot
½ kg
Garlic
2 or 3 cloves
Green chillies [optional]
1
Cilantro
3 tbsp finely chopped
Lemon juice
3 tbsp
Cumin powder
1 tsp
Red chilli powder
¼ tsp
Olive oil
2 – 3 tbsp
Salt
As needed
Black pepper powder
A dash
Method

Wash and peel the carrots, now grate them and keep it aside. Chop the garlic, green chillies and cilantro very finely.


In a large bowl add everything together, give a real good toss and mix everything really well.

This salad can be consumed immediately, but if you refrigerate it for at least an hour it will taste extraordinary.

Suggestions:

You can skip the green chillies when you make it for kids, but if added gives extra heat and taste.

Adjust the lemon juice according to your taste, but the above measurement makes a perfect lovely salad.

A very healthy and delicious carrot salad is ready to be enjoyed.
