Palak paneer is a very popular North Indian dish made with spinach and paneer. This is made by puréeing the spinach and infusing it with wonderful aromatic spices to bring out the buttery taste of the spinach and finally adding the paneer to give it a final punch. Method
Remove stems and wash the spinach really well. Boil water in a deep sauce pan, add the spinach and salt to it. Let it boil for 2 minutes. Drain the water, cool it and blend it in the mixer to fine paste. Keep it aside for later.

Cut the paneer to small cubes and keep it aside.

Heat oil in a kadai add cloves, cinnamon, cardamom, cumin seeds and sauté for 20 sec.

Add  onion  and saute until golden brown, add ginger & garlic paste and saute until raw smell goes off. Now add the tomatoes and saute really well until mushy.

Add red chilli powder, coriander powder, cumin powder, turmeric powder, green chillies and saute until the masala infuses well and nice aroma comes out.

Now add the ground spinach paste, fenugreek leaves (crushed well) and let it cook until oil oozes out.

Add the cubed paneer and let it simmer for about 2 minutes.

Now switch off the stove, delicious palak paneer is ready to be enjoyed.

Suggestions:

Finally you can add some fresh cream for added taste.

You can use lemon juice instead of tomatoes, but add the lemon juice only in the end after the spinach is cooked and the stove is switched off.

Now enjoy your meal with wonderful palak paneer.
