Peanut Butter Cookies [PBC's]

I happily baked Peanut butter cookies for the third Home Baker’s Challenge(HBC) initiated by Mrs. Priya Suresh of Priya's Versatile Recipe and hosted by  Mrs. Viji of Virundhu Unna Vaanga. The main objective of Home Baker’s Challenge is to learn and bake together. Thank you very much Mrs. Priya Suresh and Mrs. Viji for this wonderful and delightful challenge.

This month’s challenge was to bake cookies announced by Mrs. Viji. She gave four different types of cookies and I chose to make two different types of cookies for the challenge and here is one among them, the peanut butter cookie for HBC.

Here’s how to make Peanut Butter Cookie with step by step photos…



Ingredients

All Purpose flour/Maida
1 ½ cup
Baking Powder
1 tsp
Crunchy Peanut Butter (store bought)
1 ½ cup
Light Brown Sugar
1 cup
Unsalted Butter [at room temp
½ cup
Egg
1

Method

In a bowl sift all purpose flour and baking powder together and keep it aside.

In another large bowl beat butter and sugar well together until smooth.  Now add the peanut butter and mix really well.








In a small bowl beat the egg separately, now add the egg to peanut butter mixture and beat well. Slowly add the flour mixture and keep mixing until it forms into dough.


Preheat the oven to 175 °C (350°F). Place parchment paper on baking trays.

Make small balls with the dough, place the balls in the baking tray 2 inches apart. Now using the fork, press the dough to make criss cross pattern and flatten it to ½ thickness.


Bake the cookies for 16 – 18 min or until golden brown color. The acutal recipes calls in for 18 -22 min, but mine cooked in 15 -16 min.

Cool cookies on a wire rack and enjoy it with a cup of milk. Store the remaining cookies in a air tight container or in a cookie jar.

  7. I seldom bake and I think its obvious because most of dishes are those savory ones. Much loved for the peanuts flavors and certainly each one of it is of equal size. Thumbs up for the lovely cookies.
