Simple & Quick Egg Rice

Hello friends,
We all usually make egg fried rice, but this is not the egg fried rice. This is the egg rice from chef Dhamodharans book. Though I do not have his book with me, I have been doing this egg rice for years. The only reason is it can be made in no time and one healthy pot of meal. This egg rice is very simple and perfect to make in the morning rush and pack for lunch. Try it and enjoy it guys…

Here’s how to make Egg Rice with step by step photos…

 

Ingredients

Basmathi/Sona masoori rice [cooked]
3 cups
Eggs
4
Cumin seeds
1 tsp
Onions
1 chopped finely
Green chillies
5 to 6 slit lengthwise
Ginger & Garlic paste
2 tsp
Turmeric powder
½ tsp
Lemon juice
2 tsp
Curry leaves
6-8
Coriander leaves
3 tsp finely chopped
Oil
1 tbsp
Salt
As needed

Method

Cook the rice and keep it separately, see to that the rice is not sticky.


Heat oil in a kadai, temper the cumin seeds. 


Now add the onions, green chillies, curry leaves and sauté until golden brown.


Add the ginger & garlic paste and sauté until the raw smell vanishes.


Now break open the eggs to the kadai, add turmeric powder, salt and sauté the eggs and cook until well done. [Make sure the eggs are not in big chunks]


Switch off the stove, add the cooked rice, lemon juice, coriander leaves and toss around really well until the egg is evenly spread in the rice.


Again switch on the stove and toss the rice well for two min and switch off the stove.


Delicious, simple and quick egg rice is ready, enjoy it with any spicy gravy or simple raita.

Note:
Increase the number of green chillies according to your taste.
Adjust the lemon juice also as per your taste.
