Vegetable Pasta Recipe– Indian Style/How to make Vegetable Pasta Recipe with step by step photos

This is a very simple Penne pasta cooked with healthy vegetables and delicious Indian spices. The name says it all, so I don’t think it needs much of an introduction.

Here’s  how to make Vegetable Pasta with step by step photos…
Ingredients
Pasta
2 cups
Onion
1 finely chopped
Ginger & Garlic paste
1 tsp
Tomato
1 big or 2 small finely chopped
Green chillies
1 slit length wise
Mixed Vegetables
1 cup [Carrot, beans cut length wise]
Red chilli powder
¼ tsp
Coriander powder
¼ tsp
Turmeric powder
¼ tsp
Garam masala powder
¼ tsp
Tomato ketchup
1 to 1 ½ tbsp.
Coriander leaves
3 tbsp finely chopped
Salt
As needed
Olive oil
1 tbsp

Method
Boil water in a deep sauce pan, add salt and 2 tsp of olive oil, add the pasta (I used penne pasta) and let it cook. For two cups of pasta, make sure you boil at least 4 to 5 cups of water. Each pasta takes different amount of time to cook. Check the package instructions and cook them. Penne pasta takes approximately 12 – 14 min.


After the pasta cooks, switch off the stove and drain all the water. Add some cold water rinse and drain the cold water also. Keep the cooked pasta aside.


Heat oil in a kadai, add onions and green chillies and sauté until golden brown. Now add the ginger & garlic paste and sauté until the raw smell goes off.


Add the vegetables, salt and sauté for about 3 min, now add the tomatoes and sauté well.



Then close the kadai with a lid for about 5 min, the vegetables will cook in the steam.

Open the lid, add the red chilli powder, coriander powder, turmeric powder, garam masala powder and stir for about 2 to 3 min for the raw smell to go away.


Add the cooked pasta and give good toss to coat the masala all over the pasta well. Now add the tomato ketchup and mix it well.


Finally add the coriander leaves and give a good toss.


Delicious Indian Style Vegetable pasta is ready to be enjoyed.
                           

Suggestions:
  •          You can replace red chilli powder and coriander powder with ½ tsp of sambar powder and follow the same procedure.
  •          You can very well skip the green chillies.
  •          I added just carrots and  green beans, you can add capsicums, zucchini or any other vegetables along with it.
  •          If you do not have olive oil just replace it with sunflower oil.
  •          Finally you can add grated cheese and serve it, the kids will love it.
