Today’s
special in my kitchen is Beetroot Halwa, is anything special? Yes, it is my
hubby’s star birthday. We all had a bowl of halwa and enjoyed it. Beetroot
Halwa is a very easy sweet which can be made with very less ingredients.
Beetroots
have “N” number of health benefits. It is rich in antioxidants and the high
fibre content helps fighting cholesterol and reducing them. Beetroots are full
of iron help in treating anaemia and fatigue. Studies have shown they reduce
the blood pressure and any risk associated with heart attack and strokes.

how to make Beetroot Halwa with step by step photos…
Ingredients
Beetroot
|
3 large [about 4 cups of grated beet]
|
Whole Milk
|
2 cups
|
Sugar
|
¾ to 1 cup
|
Ghee
|
5 tbsp
|
½ tsp [from 4 or 5 elachis]
|
|
Cashew nut
|
10 -12 no
|
Almond slices [optional]
|
1 tbsp [for garnishing]
|
Raisins
|
10 - 12

Method
Wash
and peel the beetroots, grate them with a grater and keep it aside.
In a
heavy bottomed pan or a non-stick kadai heat about 1 tbsp of ghee and roast the
cashew nuts, raisins and keep it aside. Make sure the cashew nuts should be
golden brown and the raisins should puff up, at that point switch off the
stove.
In the
same pan heat 3 tbsp of ghee. Add the grated beetroot and saute really well
until the raw smell of the beet root vanishes. This will take about 5 – 7 min on
medium heat.
Add the
milk and let the beetroot cook in milk until all the milk is absorbed and
evaporated.
Now add
the sugar and stir well. Let all the sugar dissolve and cook until it combines
well with the beetroot. It will get halwa consistency, now add about 1 tbsp of
ghee and stir it well.
Add the
cardamom powder/Elachi Powder, roasted cashews and raisins.
Stir it in beetroot halwa for another 2 min and switch off the stove.
Suggestions:
- I have added one cup of sugar because the beetroots will be sweet. If you really have a sweet tooth you can add another ¼ to ½ cup of sugar.
- Instead of sugar you can replace it with condensed milk, the beet root halwa will be really rich.
