Here is
the very tradional South Indian recipe “Thalichha thayir sadam/Curd Rice”. It
is very simple, yet very delectable and a comforting dish. We make this thayir
sadam very often at our homes, but still I love the way they are served in the
temples in dhonnai. Ok guys, try out this thayir sadam just the like the Perumal
temple ones…
Here’s
how to make Curd Rice with step by step photos…
Serves: 2 -3
Preparation time: 5 min
Cooking time: 20 min
Ingredients
Sona Masoori Rice/Raw rice
|
1 cup
|
Thayir/Yogurt/Curd
|
2 cup
|
Milk
|
½ cup
|
Butter [optional]
|
1 tsp
|
Salt
|
As needed
|
Grated carrot
|
2 tsp for garnishing
|
Cilantro
|
2 tsp finely chopped for garnishing
|
For
Tempering
Mustard seeds
|
1 tsp
|
Cumin seeds
|
½ tsp
|
Bengal gram dal/Kadalai paruppu
|
1 tsp
|
Urad dal
|
1 tsp
|
Green chillies
|
3 finely chopped
|
Ginger
|
2 tsp finely chopped
|
Cashew nuts [optional]
|
8 -10
|
Raisins [optional]
|
8-10
|
Asafoetida/Hing
|
1 pinch
|
Curry leaves
|
6-8
|
Oil
|
2 tsp
|
Method
Wash
rice really well, add 4 cups of water, salt and pressure cook for 4 whistles.
After steam goes off, open the lid and mash the cooked rice really well with a
big spoon or matthu.
Allow
the rice to cool the add the curd/thayir, milk , butter and mix really well. Adjust
the amount of salt at this stage. Since the rice is cooked with salt be careful
in adding salt.
Heat
oil in a kadai, splutter mustard seeds, then add cumin seeds, Bengal gram dal,
urad dal and cashew nuts. Wait until the dal starts to turn color, now add the
green chillies, ginger, raisins, asafoetida, curry leaves and saute for 10 -15
sec. Switch off the stove.
Add the
tempering to the curd rice already prepared and mix really well.
Finally
add the grated carrot, finely chopped cilantro and garnish the curd rice/bagala
bath.
Yummy,
delicious and comforting curd rice/bagalabath is ready to be enjoyed. This curd
rice is good all by itself or it can be served with pickle or mor milagai.
Suggestions:
- You can garnish the curd rice with seedless grapes or pomegranates or finely chopped raw mangoes.
- Adding butter is optional, I have not added them here. I add butter when we have guest.
- Never add curd/yogurt when the rice is hot, let the rice cool and then add it.
- Heat the milk and then add it to the rice.
- Adjust the amount of curd and milk according to the required consistency. The curd rice becomes thick as time passes. In that case you can add more curd or milk and salt and adjust accordingly.
