Carrot Chutney [Side dish/dips for Idlis, dosas, rotis etc]

For me, getting the kids to eat different vegetables is a big challenge, I think it is the same with many parents. And also when it comes to packing lunch for kids, my girl prefers to have only idlis, dosas, sandwich and rotis and no rice. So I make different types of chutneys all colorful and healthy ones as side dish/dips to pack for lunch. So here is one such chutney, none other than the interesting, healthy and delicious Carrot Chutney. Please check out my other Chutney Varieties here.

Ellu Thogaiyal/Sesame Seeds Thogaiyal


Ingredients

Carrots
2 big or 4 small
Onion
1 cut to cubes
Ginger
½ inch piece
Urad dal
1 ½ tbsp.
Dry red chillies
5-6
Tamarind
One small gooseberry size ball
Salt
As needed
Oil
1 tsp

For Tempering

Oil
1 tsp
Mustard seeds
½ tsp
Cumin seeds
¼ tsp
Urad dal
½ tsp
Asafoetida/Perungayam
One pinch
Curry leaves
8-10

Method

Wash, peel and grate the carrots with the grater.


Heat 1 tsp of oil in a kadai and saute the grated carrots until the raw smell vanishes. Transfer it to a plate and let it cool.


In the same kadai heat ½ tsp of oil, add urad dal and fry until it starts to change color. Now add the dry red chillies and fry for about 2 -3 minutes or until the chillies start to change color.


Add the onions, ginger and saute them until they are translucent. Now switch off the stove and let it cool.

Now grind all the sauted carrots, urad dal, red chillies, onions, tamarind, salt together in the mixer. Add little water when grinding to make it to fine paste. Transfer the chutney to the serving bowl.

Heat 1 tsp of oil in a kadai, splutter mustard seeds, then add cumin seeds, urad dal, 
asafoetida and curry leaves  and saute for about a minute and then add it to the chutney.


Super delicious, healthy and mouth-watering Carrot Chutney is ready to be enjoyed.
Serve it with idlis, dosas, rotis or even spread it on bread to make sandwiches.
