Spicy Egg Masala

This is a very simple, quick and delectable Egg masala, my hubby’s all-time favourite. Since egg masala is commonly prepared in most of our homes, I am going straight away to the recipe.

Here’s the Spicy Egg Masala with step by step photos…


Ingredients

Eggs
6
Onion [Big]
1 finely chopped
Tomato
1 finely chopped
Green chillies
3 finely chopped
Ginger & Garlic paste
1 tsp
Red chilli powder
1 tsp
Coriander powder
2 tsp
Black pepper powder
¼ tsp
Cumin powder
1 tsp
Garam masala powder
¼ tsp
Turmeric powder
¼ tsp
Oil
1 tbsp
Mustard seeds
1 tsp
Fennel seeds
1 tsp
Salt
As needed
Curry leaves
6-10
Cilantro/kothamalli /Coriander leaves
2 tbsp finely chopped

Method

Boil the eggs, remove the shell, cut them into halves and keep it aside for later.

Heat oil in  a kadai, splutter mustard seeds, then add fennel seeds and wait until nice aroma fills the room.


Add the finely chopped onions, green chillies and saute until golden brown. Now add the ginger & garlic paste and fry until the raw smell vanishes.  Add the tomatoes and saute for about 3 minutes or until they turn mushy.


Now add red chilli powder, coriander powder, turmeric powder, cumin powder, garam masala powder, black pepper powder salt and mix really well. 


Sprinkle some water and cook the masala until the raw smell vanishes. 


When the masala is ready add half the coriander leaves and mix well.


Now add the egg pieces and cover it with the masala. Leave in low flame for about 2 minutes and then switch off the stove.


Finally garnish with coriander leaves and serve them hot with a slice of lemon.


This Egg masala can be served with biryanis, any rice varieties or even rotis and chapathis.
