This
carrot & tomato kootu is the easiest kootu to make especially in the
morning rush when you need to pack lunch. The best part of it is you don’t need
to grind anything, yes I can see lot of smiles in all of your face. I make this
kootu when I am totally tired and when I don’t want to cook, but still have to
cook. It is so easy, just add everything to the cooker, pressure cook it and
then finally temper it. See, how easy it is? Still a very healthy and heavenly tasting kootu. Now let’s move on to the recipe.

Method
Wash
the toor dal/thuvaram paruppu, add enough water (2 ½ cups) of water and
pressure cook for two whistles. Now switch off the stove.
After
the steam releases, open the lid, add tomatoes, carrots, green chillies, sambar
powder, turmeric powder, salt and ¼ cup of water to the dal.
Pressure
cook for another two whistles and switch off the stove. Open the lid after the
steam releases.
Heat
oil in a pan, splutter mustard seeds, then add cumin seeds, dry red chillies,
curry leaves and asafoetida.
Add the
tempering to the cooked kootu. Adjust the water consistency accordingly.
Ta
da!!! Delicious, healthy and yummy kootu is ready to be enjoyed. Serve
it hot with steamed rice, rotis, chapatis etc.
