I had a
box of raspberries left in my freezer, so wanted to make some muffins with
them. I had bookmarked this raspberry muffin recipe long time ago, so made it
this weekend and the kids loved it. Just try out this pink and colourful muffins,
you will surely love it.
Here’s
how to make Raspberry Muffins with step by step photos….
All-purpose flour/Maida
|
2 cups
|
Baking powder
|
2 tsp
|
Salt
|
One big pinch
|
Butter
|
½ cup at room temperature
|
Sugar [white]
|
1 cup
|
Eggs
|
2
|
Milk
|
½ cup
|
Vanilla extract
|
1 tsp
|
Raspberries [Fresh/Frozen]
|
1 ¼ cup
|
Nutmeg powder
|
One big pinch
|
Cinnamon powder
|
One big pinch
|
Preparation
time: 15 minutes
Baking
Time: 30 minutes
Serves:
14-16 muffins

Method
Mix
all-purpose flour, salt, baking powder together and keep it aside.
Preheat
the oven to 180°C/350°F.
In a
large mixing bowl, add ½ cup of butter and 1 cup of sugar.
Cream
both the butter and sugar together until light and fluffy with a hand mixer or
a whisk.
Now add
eggs one at a time and mix thoroughly after each addition.
Add
vanilla extract and mix really well.
Add the
flour mixture, nutmeg powder, cinnamon powder to the butter mixture. Do not add
the whole batch of flour fully at once.
Add
some flour, little milk, run your hand mixer or whisk. Similarly complete all
the flour and milk.
Now add
the raspberries [I used frozen] and fold it in gently with a spoon.
Fill ¾
of muffin cups with the batter and bake it in the oven for 25-30 minutes.
Remove
them from the oven and let them cool for about 10 minutes before serving.
Yummy,
delectable and colourful Raspberry Muffins are ready to be enjoyed.
