Vegetable Puffs with Potato Filling

Vegetable puffs is a very popular and a common evening snack in India and is sold in all the bakeries. It is an all-time favorite among all the age groups especially kids. Not only just an evening snack it is a perfect party snack and also is a great hit in all the birthday parties. As far as the filling is concerned the potato & peas filling is very common, you can make filling with any other vegetables of your choice as well. There are a variety of puffs available in bakeries like chicken puffs, meat puffs, egg puffs etc.

Here is how to make Vegetable Puffs with step by step photos….

Ingredients

For Vegetable Stuffing:

Potatoes
3 [boiled & mashed]
Green peas
¼ cup
Onion
1 [big] finely chopped
Ginger & Garlic paste
2 tsp
Red chilli powder
1 tsp
Coriander powder
2 tsp
Garam masala powder
½ tsp
Turmeric powder
½ tsp
Cumin seeds/Jeeragam
1 tsp
Curry leaves
6-8
Coriander leaves/Cilantro
1 tbsp finely chopped
Lemon juice
½ tsp [adjust to taste]
Oil
2 tsp

For the Puff

Puff pastry
1 pack [store bought]
Oil
1 tbsp to brush on top
Flour
For dusting
Preparation Time:10 minutes
Cooking Time: 50 minutes
Serves: 16 puffs

Method

Keep the puff pastry at room temperature for 30 minutes before baking the puffs.

Meanwhile prepare the vegetable filling. Wash, boil and peel the potatoes. Mash them and keep them aside.

Heat oil in a kadai, splutter the cumin seeds.


Add the onions, curry leaves, pinch of salt and saute until the onions are translucent.


Now add the ginger & garlic paste and fry until the raw smell vanishes.


Add the red chilli powder, coriander powder, garam masala powder, turmeric powder, required amount of salt and fry for about a minute.


Now add the peas, boiled and mashed potatoes and mix really well and cook on low flame for another 5-6 minutes.


Switch off the stove and add the coriander leaves, lemon juice and mix really well. Now the stuffing for the puff is ready.


Rolling the Puff Pastry:

Preheat the oven to 200°C/400°F.

Now let’s roll out the puff pastry. Sprinkle some flour on the counter top and place the puff pastry.

Roll out with the rolling pin into a square [approximately 5mm to 6 mm thickness].


Cut the puff pastry to equal rectangles, I could make 16 rectangles.


Line the baking trays with aluminium foil and preheat the oven to 200°C/400°F.

Now start filling each rectangle sheet with the potato filling as shown in the photo. Close the edges and press them with your fingers.


Similarly fill all the puff pastry squares with the filling and arrange them in the baking tray.

Brush all the filled puffs with very little oil using a brush.


Bake the puffs for 10 minutes. After 10 minutes, turn the puffs upside down and bake for another 5 minutes and switch off the oven.


Super delicious golden brown vegetable puffs are ready. Serve them hot with tomato ketchup or any sauce of your choice.

Suggestions:
  • I have made potato filling; you can choose any vegetable filling of your choice.
  • You can make non –veg puffs with chicken filling, which I will be posting soon.
  • When sealing the puffs you can use one beaten egg and seal the puff, this is totally optional.
  • I have baked for 15 minutes, you can bake according to the baking instructions in the puff pastry pack.
  • Brushing oil on the puff is also optional, if brushed with oil the puffs don’t get dried and bake perfectly to golden brown color. Make sure the puffs turn golden brown before removing it from the oven.
