Remove the head and clean the anchovies/nethili meen  really well. Wash them thoroughly for about 3 to 4 times with fresh water. Drain out all the water and pat them dry.

Take the Anchovies/Nethili Meen in wide bowl.

Add the ginger & garlic paste, red chilli powder, coriander powder, turmeric powder, cumin powder, garam masala powder, lemon juice, corn flour and salt to the anchovies/nethili meen and mix well until the masala coats in each and every fish.

Cover and let it marinate for about 1 to 1 ½ hours.

Heat about 2 to 3 tbsp of oil in pan. Add the anchovies to oil and fry them well on all sides until the color changes to golden brown. Do not overcrowd the pan, add about 10 pieces or more depending on the size of the pan.

Similarly fry all the anchovies/nethili meen.

I have shallow fried the fish, you can deep fry the fish with more oil.

Finally in the same oil fry the curry leaves until crisp, sprinkle on the fried anchovies. Serve this hot Nethili Meen Varuval with simple rasam and white rice.

Super delicious and mouth-watering Nethili meen varuval is ready to be enjoyed.
