I am so happy to share with you all that today Priya’s Virundhu is celebrating First Blog Anniversary. This day last year I started this wonderful journey of blogging. It’s been a whole year and it is totally unbelievable as time flew really fast for me. The blogging world is really amazing and I am really happy to have come across so many wonderful, inspiring and loving bloggers. This virtual world has taught me so many things and I made lot of sweet friends. This journey of one year has been tremendous for me and I have successfully posted 352 posts. This is really a great achievement for me and it is all possible only because of your love and support.

Here's how to make Red Velvet Cake with step by step photos...

On this special occasion I would like to thank all my readers, followers, visitors, subscribers, co-bloggers, facebook fans, friends and family whole heartedly. Thank you all for the great support and encouragement you all have given me without which I could not have reached up to this point. I request all of you to keep giving the same support and encouragement in the coming years as well. As a special thanks to each and every one of you I am dedicating this yummylicious Red Velvet Cake, with true love.  


Ingredients
All Purpose Flour/Maida
2 cups
Baking Soda
1 tsp
Baking Powder
1 tsp
Cocoa Powder [unsweetened]
2 tbsp.
Salt
¼ tsp
Caster Sugar[powdered sugar]
1 ½ cup
Butter [room temperature]
8 tbsp. or ½ cup
Vanilla Extract
2 tsp
Eggs
2
Buttermilk
1 cup
Red food colour
1 ½  tbsp.

For the Icing
Double Cream
2 cups
Caster Sugar
2 tbsp.
Vanilla Extract
1 tsp
Vanilla Pudding mix[optional]
2 tbsp.
Preparation Time: 20 minutes
Baking Time: 25 to 30 minutes
Makes: 24-26 servings

Method
Preheat the oven to 325˚ F or 160˚C. Line two 8 inch cake pan with parchment paper and oil the sides.

In a wide bowl, sift all-purpose flour, baking powder and baking soda. Now add salt, cocoa powder and mix everything really well and keep it aside.


In another wide bowl add butter and sugar together. Beat with hand mixer until creamy.


Add the vanilla extract, eggs – one at a time and beat really well.


Add the red food colour and mix really well.


Now add the flour mixture and buttermilk alternatively and mix them really well until well combined.


Now pour the batter equally in to the cake tins.


Bake it in the oven for 25 to 30 minutes or until a toothpick comes out clean. Do not over bake, as the cake will continue to cook as it cools.


Let the cake cool on a cooling rack for about 10 to 15 minutes. Now place it on a plate, turn it upside down and get the cake out. Cut along the edges with knife it is stuck to the pan. Slowly remove the parchment paper and you are done with the cake.


Voila !!! Delicious, soft and yummy Red Velvet Cake is ready….


For the Cream

In a cold bowl beat the heavy cream with hand mixer on medium speed for 5 minutes. Stop the mixer, add the caster sugar, vanilla extract, vanilla pudding mix and run the mixer until the cream is stiff enough.


Refrigerate the cream for about 2 hours before applying on the cake.

Yes, your cream is ready to be applied.
