Here’s how to make Vegetable Masala oats with step by step photos…

Ingredients
Oats [Quaker]
1 cup
Vegetables [Carrots, beans, peas]
½ cup
Onion
1 finely chopped
Tomato Puree
2 tbsp
Red chilli powder
½ tsp
Coriander powder
1 tsp
Turmeric powder
¼ tsp
¼ tsp
Black pepper powder
½ tsp
Water
2 cups
Oil
2 tsp
Salt
As needed
Coriander leaves
Little finely chopped for garnishing
Lemon juice
A few drops

Method
Dry roast the oats in a kadai until nice aroma arises in medium flame. Switch off the stove and transfer it to a bowl. Be careful not to burn the oats.

Meanwhile cook the chopped vegetables in microwave for about 4 minutes or on stovetop with enough water until soft.

Heat 2 tsp of oil in the same kadai. Add the chopped onions and sauté until translucent.

Add the cooked vegetables and mix really well.

Now add the red chilli powder, coriander powder, turmeric powder, garam masala powder, salt and sauté until raw smell vanishes.

Add 2 cups of water and let it come to rolling boil. Add the oats, mix really well and let it cook.

Meanwhile add the tomato puree and stir well.

Finally add the pepper powder, finely chopped cilantro, few drops of lemon juice and adjust the amount of water as needed.

Serve this healthy and filling Vegetable Masala Oats either for breakfast or in the evening as light meal.
