Black Eyed Beans Soup/Karamani Soup

Black Eyed Bean is a small bean with creamy texture, rich in protein and pack with fibre. If you are looking for a simple, healthy and filling dinner, just make a pot of soup and serve them with bread. Check out other healthy and filling soup varieties here.

Here’s how to make Black Eyed Beans Soup with step by step photos…


Ingredients

Black Eyed Beans/Karamani
2 cups [cooked]
Onion
1 finely chopped
Green chillies
3 finely chopped
Garlic
4 cloves
Tomatoes
2 finely chopped
Carrots
2 finely chopped
Celery stick
1 finely chopped
Coriander/Cilantro leaves
3 tbsp finely chopped
Vegetable stock/Water
4 cups [optional]
Tomato paste
2 tsp
Cumin powder
1 tsp
Garam masala powder
¼ tsp
Coriander powder
1 tsp
Black pepper powder
¼ tsp
Salt
As needed
Lemon juice
1 tsp [adjust to taste]

For Tempering

Oil
2 tsp
Cinnamon sticks
2
Cloves
2
Bay leaves
2
Preparation time: 10 minutes      
Cooking time: 30 minutes
Serves: 4-6

Method

Wash and soak the black eyed beans for 8 hours. Drain and wash them thoroughly in fresh water and pressure cook them enough salt and water for three whistles. After the steam releases open the pressure cooker, drain the water and keep the beans aside.


Meanwhile chop the onions, green chillies, garlic, carrots, celery, tomatoes and keep them aside.

In a wide pan heat 2 tsp of oil, add cinnamon sticks, cloves, bay leaves and wait for nice aroma to arise.


Add the finely chopped onions, green chillies, garlic and sauté until they are translucent.


Now add the tomatoes and fry until they are mushy.


Add the carrots, celery and sauté well until the vegetables are soft.


Now add the cumin powder, garam masala powder, salt and mix really well.


Add the cooked beans and mix well. 


Add the vegetable stock or water, coriander powder, tomato paste, coriander leaves and stir well.Close the pan with lid and let it cook for about 15 minutes.


Switch off the stove, add required amount of lemon juice, black pepper powder and adjust the amount of water accordingly. Serve this filling and aromatic soup with toasted bread and enjoy your day.


Suggestions:
Addition of vegetable stock is optional, just replace it with water.
I have added carrots and celery; you can add capsicums and other vegetables of your choice.
