Caramel Custard Pudding/ Mexican Flan - Happy Valentine's Day

Today from Priya’s Virudhu, we are wishing each and every one of you, “Happy Valentine’s Day”. Love for your friends, family or any one special is always in your heart, Valentine’s Day is the special day to express your true love, show that you really care and cherish all the little moments. So for this special day, I made Caramel Custard Pudding as a special treat for my loving family. It is a very light, delicate and heavenly tasting dessert prepared in most of the places in India. 

Here’s how to make Caramel Custard Pudding with step by step photos…

Ingredients
Milk
250 ml
Eggs
3
Sugar
2 tbsp
Vanilla essence
½ tsp

For Caramel
Sugar
4 tbsp
Water
2 tbsp
Preparation time: 10 minutes
Cooking/Baking time: 45  minutes

Method

For Making Caramel:

Heat a pan and add sugar to it. Start stirring it, slowly add the water wait for the bubbles to start and change to golden brown colour. Switch off the stove.


Pour it immediately to the pudding moulds or ramekins.


For Making the Pudding:

Preheat the oven to 190 C/375 F.

Boil the milk in a heavy bottomed vessel. After it boils, switch off the stove and let it cool for few minutes.


Beat the eggs, sugar and vanilla essence until fluffy. You can use either your mixer or whisk.

Now add the boiled milk to the egg mixture, beating continuously with a whisk. Strain this through a strainer to remove undissolved egg white strands.


Now place the ramekins or pudding mold in to a baking pan filled with water for about 1 inch height. Pour the egg & milk mixture to the ramekins.


Keep the baking pan in to oven in the middle rack and bake it for about 35-45 minutes. Check if your pudding is ready by inserting a tooth pick, if it comes out clean, then your pudding is ready.


Remove from the oven and refrigerate for at least one hour before serving, but if you leave them over night they taste awesome. Before serving run a knife around the edges of the pudding to loosen a bit and then invert the ramekins onto the serving plate.


A very delicious caramel coated vanilla pudding is ready to be enjoyed.

Suggestions:

  • Here I have baked the pudding the oven, alternatively you can steam cook them.
  • Place the baking bowl [with ramekins] inside a idli cooker or steamer or cooker  and cook for 15-20 minutes.

    1. Thanks a lot Sangeetha, you can try replacing eggs with custard powder, though they dont taste exactly the same but it is still light and delicious...
