Chicken
Tikka is a very popular and authentic dish in the Indian subcontinent. Not only
in India or Pakistan it is very famous around the world and seen in most of the
restaurant menus. The word “Tikka” means “bits” or “pieces”. Chicken Tikka is
traditionally made with small pieces of boneless chicken, by marinating them
with mixture and spices and yogurt, then threaded in skewers and baked in
clay-based oven called the tandoor. Chicken Tikka is most places is also

Here’s
how to make chicken tikka with step by step photos…
Chicken

500 gm [boneless]
|
Thick curd/yogurt
|
½ cup
|
Ginger & garlic paste
|
1 tbsp
|
Red chilli powder
|
3 tsp
|
Coriander powder
|
1 ½ tsp
|
Turmeric powder
|
½ tsp
|
1 tsp
|
|
1 tsp
|
|
Kasoori Methi [dry]
|
2 tsp [crushed with hand]
|
Lemon juice
|
2 tbsp
|
Oil
|
2 tbsp
|
Salt
|
As needed
|
Red food colour
|
One pinch [optional]
|
*Some
more oil and lemon juice for basting (applying when baking) the chicken
Preparation
time: 10 minutes
Baking
time: 25-30 minutes

Method
Wash
and cut the chicken to cubes and pat them dry with paper towel.
Add rest of all the ingredients in a bowl to the chicken and mix thoroughly.
Cover it with clingfilm or lid and marinate for 7-8
hours or overnight.
You can
either bake the chicken in a baking tray or in the skewers. If you are using
bamboo skewers soak them in the water for about 30 minutes. If you are using
the baking tray line it with aluminium foil.
Take
the chicken out of the refrigerator before 30 minutes, so that it comes to room
temperature.
Pre
heat the oven to 250 C for 15 minutes.
Meanwhile
insert the chicken into the skewers, leaving a ¼ inch gap between each piece
and arrange them on a baking tray to collect the juices during baking.
Arrange
rest of the chicken pieces in the baking tray. Reserve the remaining masala
paste.
Reduce
the oven temperature to 220 C.
Pull
the baking tray out after 10 minutes, brush rest of the masala paste on all the
chicken pieces.
Again
after 10 minutes, pull the baking tray out turn all the chicken pieces and the
turn the skewers also. Brush little oil and lemon juice on all the chicken
pieces and continue baking.
Bake in
the oven for 25 – 30 minutes or until the chicken starts to change colour with
little charred colour.
Yes,
super easy and delicious Chicken Tikka is ready to be enjoyed.
Serve this
Chicken Tikka with sliced onions, lemon wedges, coriander chutney or tamarind
chutney. You can also make chicken tikka masala with these tikkas which is coming up in my next
