White Vegetable Kurma Rcipe/Vellai Kurma Recipe – Restaurant Style/How to make White Vegetable Kurma with step by step photos and Video

I know most of you must have had Vegetable White Kurma in restaurants served as accompaniment for chapathis/rotis or pulavs/biryanis. Wondering how to make this delectable White Vegetable Kurma? It is made by grinding coconut, poppy seeds, coconut, milk and green chillies. This kurma has a rich and creamy texture and  a very healthy dish. Here’s how to make White Vegetable Kurma with step by step photos…

Ingredients
Onion
1 big thinly sliced
Green chillies
5-6 slit lengthwise
Ginger & Garlic paste
2 tsp
Carrots
2 cut to 2inch pieces
Beans
12-15 cut to 2inch pieces
Cauliflower
8-10 florets
Potato
2 cut to cubes
Green peas
½ cup
Milk
¾ cup
Yogurt/Curd
2 tbsp
Mint
10-15 leaves
Cilantro/Coriander leaves
2 tbsp finely chopped
Salt
As needed

For Tempering
Oil
1 tbsp
Cloves
3 or 4
Cinnamon sticks
2
Cardamom/Elachi
3
Bay leaves
2
Fennel seeds/Perunjeeragam
½ tsp

For Grinding
Milk
¼ cup
Poppy seeds/Gasa gasa
2 tbsp
Cashew nuts
6
Roasted gram/Pottukadalai
1 tbsp
Grated Coconut
½ cup
Green chillies

Preparation time: 20 minutes                            Recipe Category: Main Course
Cooking time: 15 -20 minutes                             Recipe Cuisine: Tamil Nadu, India
Serves: 6-8

Method
Wash and cut all the vegetables and keep them aside. Meanwhile soak the poppy seeds in warm milk for about 10 minutes.

Now grind all the ingredients mentioned under grinding along with the poppy seeds to a fine paste with required amount of water and keep it aside.

Heat oil in a pressure cooker, add all the ingredients mentioned under tempering and wait for nice aroma to arise.

Now add the onions, green chillies and saute until golden brown color.

Add the ginger & garlic paste and saute until raw smell vanishes.

Add all the vegetables, salt and fry for about 2 minute. Add about 2 cups of water and pressure cook for 1 whistle.

After the steam releases open the lid and pour the ground coconut paste and stir well.

Add the ¾ cup of milk, mint leaves, chopped cilantro and let it cook for another 5 minutes.

Finally add the yogurt and switch off the stove.

Super delicious, rich and creamy restaurant style white vegetable kurma is ready to be enjoyed.

Serve this white vegetable kurma with any kind of variety rice, white rice, chapathis, rotis, naans etc.

Suggestions:
I have made this kurma in pressure cooker, you can do the same in a pot except it takes more time to cook the vegetables.
You can add any number of vegetables, depending on availability.
Adjust the amount of green chillies according to your taste.

  30. The service has always been very attentive whenever we've been there. As for value, entrees are about $10 but in my opinion well worth it, we've always left full and very satisfied. I've been craving their lunch buffet for awhile now so we plan on stopping in over the weekend! best restaurant in jodhpur
