Dates & Nuts Cookies

All the kids love cookies, why not add something nutritious to the cookies to make it tastier and healthier. After having made the Dates & Nuts Cake, I wanted to make dates and nuts cookies for my kids. Actually to tell the truth, myself and my husband were glued to the cookie box. Believe it or not they are really addictive. I added chopped almonds but the choice of nuts can be yours. Ok now ladies, do try this scrumptious cookies and you will surely fall in love with it.

Here’s how to make Dates & Nuts cookies with step by step photos….


Ingredients

All-purpose flour/Maida
1 ½ cup
Baking powder
1 tsp
Brown sugar/White sugar [powdered]
4 tbsp
Salt
¼ tsp
Butter [Melted]
½ cup
Egg
1
Vanilla essence
½ tsp
Dates
½ cup chopped
Nuts [Almonds/walnuts]
¼ cup chopped
Preparation time: 10 minutes
Baking time: 15 to 20 minutes
Makes: 25 to 28 small cookies

Method

Preheat the oven to 180 C/350 F for 10 minutes. Line the baking trays with parchment paper and keep them ready.

Chop the dates, nuts and keep it aside.


In a bowl sift together all-purpose flour and baking powder. Add salt to the flour and mix it well.


In a bowl add the melted butter, powdered sugar and whisk really well until well combined.


Add one egg, vanilla essence and mix really well.


Now add the flour mixture to the butter and mix.


Add the dates and nuts to the flour and mix everything with hand to make a dough.


Make small balls with the dough and arrange them on the parchment paper 2 inches apart and bake them for about 15 to 20 minutes  or until done.


The cookies will look golden brown in color and your whole house will be filled with wonderful aroma of the cookies.

Leave it on the cooling rack for about 10 minutes, then store it in airtight container or enjoy it with a cup of milk.
