I love
to eat pasta, but I am not a cheese person. So most of the times, I try to
avoid as much cheese as possible, but my kids love cheese to the core. Today I
made creamy, healthy, tangy and flavorful pasta without adding cheese, it was
really a winner. The addition of milk made it creamy, the addition of spinach
made it healthy, addition of sun dried tomatoes gave some tanginess and the
rest of all the ingredients gave a boost to the whole dish. Do check out other delectable pasta varieties here...
Here’s

Method
Soak
the sun dried tomatoes in hot water for about 15 to 20 minutes. Squeeze the
water and chop the tomatoes to small pieces.
Cook
the pasta according to the package instructions.
Heat
oil in a kadai, add chopped onions, garlic and saute until they are
translucent.
Add the
chopped sun dried tomatoes and saute for about 2-3 minutes in medium heat.
Now add
the chopped spinach and saute well until it wilts down.
Add the
milk or cream, salt, black pepper powder and let it come to boil. I used milk
for the pasta to cut the calories.
Add the
cooked pasta, red chilli flakes and let it cook for another 2 minutes.
Finally
add the parmesan cheese and mix well. I skipped adding the cheese to make this
pasta healthier.
Suggestions:
- If the
pasta absorbs all the milk, add more milk or cream and adjust the consistency.
- Adjust
the amount of black pepper powder, red chilli flakes and salt according to your
need.
- If
sundried tomatoes are not available, then replace it with fresh tomatoes.
- If you
have some olive, chop, sprinkle on pasta and serve it hot.
- Though
I have not added cream and cheese, the pasta sauce was still creamy and
delectable.
