This
Tres Leches Cake is a special Mexican cake, I did for my girl’s birthday as an
exotic treat and also to celebrate my 400th post. I thank each and
every one of you to have encouraged me, supported me and helped me reach to
this point. Before going into tres leches recipe, I would love to share a few
things about this dense, moist, delectable and fantastic cake. Tres Leches Cake
is a sponge cake, soaked in three different kinds of milk: evaporated milk,
condensed milk and heavy cream. This tres leches cake does not use butter, but
it is a very light cake, with lots of air bubbles. It has a unique texture, despite
of being soaked in the three milk mixture, it does not have soggy consistency.

Heavy cream or Milk

Method
Preheat
the oven to 180 C/350 F. Spray a 9 by 13 inch pan liberally with non-stick
spray or line it with parchment paper.
In a
wide bowl, sift together flour and baking powder. Add the salt to the flour and
mix well.
Separate
the egg whites to one bowl and egg yolks to another bowl.
Beat
the egg yolks with ¾ cup sugar on high speed until the yolks are pale yellow.
Add the
milk and vanilla essence to the egg yolk mixture.
Now add
the flour mixture and stir very gently well combined without any lumps.
Beat
the egg whites on high speed unil soft peaks form. Now add 1 ½ tbsp. of sugar and beat until the egg whites are stiff but not dry.
Now
fold egg white mixture into the batter very gently until combined.
Pour
the mixture into the baking pan and spread it evenly.
Bake it
for 30 to 40 minutes or until a toothpick comes out clean. Remove the cake from
the oven and allow to cool.
Meanwhile
combine condensed milk, evaporated milk and heavy cream in a bowl. I have used regular milk instead of heavy cream, but still the cake was rich and delicious.
When
cake has cooled, pierce the surface of the cake several times with a fork.
Now slowly
pour the combined milk over the top of the cake and reserve about ¼ cup of milk
to be used when serving the cake. [You can keep the cake in the baking pan and pour the milk, since it was for birthday, I had to transfer the cake to another deep glass square bowl. This is totally optional.]
Allow
the cake to absorb the milk mixture for about 45 minutes. You will not believe
the cake will drink all the milk and it is so soft, moist and ready.
Now
spread the whipped cream on top of cream. Since it was a birthday cake, I
decorated cake and we enjoyed it.
If not
slice out a piece of the cake, spoon out some of the reserved milk, spread some
whipped cream and serve the delicious, rich and moist cake.
Suggestions:
- I have not used heavy cream when making the milk mixture, I have replaced it with the regular milk.
- The actual recipe uses about 3 tbsp of sugar in the egg white mixture, but I felt it was really sweet. So I used about 1 ½ tbsp. of sugar when whisking the egg white.
