Cauliflower Soup/Curried Cauliflower Soup

Soups are the best and healthy appetizers compared to the deep fried ones. Soups are not just appetizers, but also can be had for light dinners and lunch. Have one big bowl of soup along with bread toasts. Today I am going to share a very flavorful, healthy and a filling cauliflower soup.

Here’s how to make cauliflower soup with step by step photos…


Ingredients

Cauliflower florets
2 cups
Onion
1 big [finely chopped]
Garlic cloves
6 finely chopped
Cumin seeds/Jeeragam
1 tsp
Green chilli
1 finely chopped
Garam masala powder
1 ½ tsp
Black pepper powder
1 tsp
Mixed herbs [dried]
1 tsp
Milk
2 cups
Salt
As needed
Red chilli flakes
As needed
Oil
1 tbsp
Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 4-5

Method

Separate the cauliflower florets. Put the cauliflower florets in hot water along with salt to get rid of any worms for about 10 minutes. Drain the water from the cauliflower florets and keep it aside.

Heat oil in a pan, add cumin seeds and let it splutter.


Now add onions, garlic cloves, green chillies and sauté really well.


Add the cauliflower florets and sauté well for about 2 minutes. 


Add garam masala powder and mix thoroughly. Pour about 1 ½   cups of water and let it boil for about 5 minutes and switch off the stove.


After it cools, grind the cauliflower florets to a fine paste.


Now pour the ground paste to the pan, add milk, salt and mix well and let it come to one boil.

Add the mixed herbs, black pepper powder, red chilli flakes and mix well.


Switch off the stove and serve the soup hot with toasted bread or chapatis.


Note:
Adjust the amount of black pepper powder, red chilli flakes according to your taste.
